Rosa Blanca, the new Cuban and Caribbean-inspired diner from Iron Chef Jose Garces, is set to open its doors on Monday, Dec. 16.
Garces and chef de cuisine Yun Fuentes created a menu of Cuban comfort foods that includes Vaca Frita, which is a braised beef dish with moro and sweet plaintains topped with fried eggs, and Guizo de Maiz, a sweet corn chowder with smoked ham, tomato broth and pumpkin. The duo also updates the classic Polla La Brasa by adding sour orange-achiote butter and roasted fingerling potatoes.
Guests can pair the dishes with the restaurant’s signature Mojito Rosa Blanca, a cocktail of gold rum, lemon, tamarind and basil. Rosa Blanca’s 15-seat bar will also be stocked with a selection of rum flights, wine and beer.
Rosa Blanca will be Garces’ seventh restaurant in Philadelphia. His other local eateries include JG Domestic, Garces Trading Co. and Tinto. Garces also expanded his other Philadelphia restaurants, Amada, Distrito and Village Whiskey, to Atlantic City.
