At Townsend, the drinks go the natural route with the Garden Shed (boasting Herbs de Provence-infused vodka, green juice, and Genepy) the T & G (made with tequila, Amontillado, ginger, honey, lemon, and mezcal) and the Fish House Punch (comprised of cognac, rum, apricot, Earl Grey, lemon and egg white.) The libations go well with one of the restaurant’s French-forward dishes.

Urban Farmer

The Logan Hotel’s ground-floor hotspot is offering both spring-time cocktails and mocktails for Philadelphians to try. UF’s adult libations include the In & Out Margarita ($17) mixed with Corzon Blanco Tequila, raspberry-lychee cordial, agave, lime, and a pink Himalayan salt rim; the Posh Negroni Spritz ($17) with Campari, Sweet Vermouth, peach liqueur, and sparkling wine; and the Asparagus Brine Martini ($16) featuring Union Forge vodka, dry vermouth and housemade brine, garnished with a parmesan stuffed asparagus. 

Low-ABV wise, diners can sip on the Pomegranate Spritz ($12) with pomegranate juice, rosemary and lime, topped with fever tree club soda; a Forgiving Manhattan ($12) with Verjus Rouge, spiced lemon-cinnamon-peppercorn shrub, and housemade vermouth, and another asparagus-centric drink: The Dirty No-Tini ($12) made with Seedlip Grove 42, house-made brine, and olive oil with a pickled asparagus garnish.

CO-OP Restaurant & Bar

If you’re in University City, CO-OP is currently offering a new variety of inventive libations. While here, try the Wilmington Strawberry Crush ($13) mixed with Stateside Vodka, elderflower, lemon, thyme, and strawberry; the Jersey Shore Kettle Corn Whiskey Sour ($13) with Dad’s Hat whiskey, kettle corn syrup, lemon, and egg white; and the Philadelphia Fishtown Punch ($13) comprised of Jamaican rum, black tea, lemon, and peach.

Royal Boucherie 

While at this Old City bar and restaurant (which also happens to have a charming upper level patio), check out the Rue Des Fraises ($14), made with Arette Tequila, Pamplemousse, Montenegro, and strawberry, and the Smokeshow ($14), which features Banhez Mezcal, melon liqueur, and Thai green chili. RB calls this duo the “perfect mix of sweet and spicy.”

The Dutch

The Dutch is open for breakfast and dinner service, but its the evening cocktail menu that showcases the flavors of the spring season. While here, Philadelphians can sip on Shades of Chartreuse ($15) comprised of gin, chartreuse, citrus, mint, and honeydew cucumber syrup; and the bright Beet-ernally Grateful ($15) fashioned with tequila, beet shrub, cynar, citrus, bitters, and garnished with fresh-ground black pepper.

Forsythia

Forsythia always has inventive cocktails, even in the spring-time season, and on this menu in particular, they are named after media classics. While here, diners can try the Hare Do, a bourbon-forward libation featuring carrot allspice dram, lemon-seabean bitters, and egg whites; the Bananarama, featuring sherry, Cachaça, banana, cardamom, and lime; and the Mexican Radio, made with mezcal, gin, Cordoval, hibiscus, and coconut milk.

Art in the Age

AITA always leans into seasonal tasting options, and 2023 is no different. The Old City space is currently highlighting the Sweet Pea Spritz ($13), boasting  Snap Pea infused vodka, Lo-Fi Dry Vermouth, Addition tarragon bitters, and celery soda; the Garter Snake ($14), made with apricot-infused Kinsey American Whiskey, Dolin Rouge vermouth, Green Chartreuse, Addition thyme bitters, and lemon peel oil; and the Chamomile Old Fashioned ($14),made with chamomile-infused Kinsey Bourbon, Oolong syrup, and Addition black pepper bitters.
