It’s a summer of spritz at Royal Boucherie

What’s the summer without a little spritz?

Well, at Royal Boucherie for the second sunny season in a row, Philadelphians can head to the Old City venue to check out everything their re-launched Spritzer Bar has to offer. This seasonal pop-up is led by Lead Bartender Eden Beschen, and this year will feature brand-new, expertly curated offerings.

As a release states, in a creative twist on a standard spritz, guests imbibing at Royal Boucherie this summer can select a base of either light (vermouth and aromatized wine), bitter (Aperitivos and Amari), or sweet (liqueurs), followed by a bubbly topper of one’s preference.

Guests can choose from a variety of light bases, like vermouth and aromatized wine, with options including Cocchi Americano, Cocchi Rosa, Lillet Blanc, Lillet Rosé, Bordiga Rosso, Carpano Antica, Carpano, Classico, Carpano Dry, Moot Madeira, Dolin Rouge, Dolin Blanc, Dolin Dry, Trincheri, and Dry. 

There are also a few different options for those who love bitters in the realm of Aperitivos and Amari, including Aperol, Bonal, Bonanto, Campari, Cappelletti, Eborista Aperitivo, Faccia Brutto Aperitivo, and Saler’s. And finally, for Philadelphians looking for a sweeter sipping experience, they can personalize their base with a seasonal liqueur with flavors spanning Apricot, Cassis, Cherry, Framboise, Melon, Müre, Pamplemousse, Pêche, St. Germain, or Pommeau.

The base can then be topped off with guest’s choice of Club Soda ($14), or Sparkling White Wine, Sparkling Rosé ($16). This “build your own spritz” module is also designed to encompass Royal Boucherie’s unique Amaro selection the release states— as well as “provide guests with a personalized refreshing elixir throughout the summertime.”

“We’re so excited to finally have our Spritzer Bar back and to continue to give guests the most unique and fulfilling experience possible when imbibing with us,” said Beschen in a statement. “The Spritzer Bar brings a personalized twist to our selection of craft cocktails and just in time for summer sipping.”  

In addition, Royal Boucherie has just debuted an all-day seasonal menu in conjunction with the return of weekday lunch, available from Wednesday through Friday, beginning at 11am.

The new seasonal menu includes newly launched summer curated cocktails with some standouts including Rue Des Fraises ($14), comprised of Arette Tequila, Pamplemousse, Montenegro, and strawberry, Oh Snap! ($15) fashioned with snap pea-infused Tito’s Vodka, lemongrass and bergamot, What’s The Dilly-O ($14) prepared with cucumber & dill-infused gin, Carpano dry vermouth, and honey, and Smokeshow ($14) composed of Banhez Mezcal, melon liqueur, and Thai green chili, the release finishes.

Royal Boucherie (52 S 2nd St.) is open Monday through Thursday, 4 – 10 p.m., Friday and Saturday, 4 – 11 p.m., and Sunday, 4 – 9 p.m. for dinner service, Wednesday through Friday, 11 a.m. – 3 p.m. for lunch service, and Saturday and Sunday, 10 a.m. – 3 p.m. for brunch service.
