Inside Terra Grill, Laurent Tourondel’s wood-fired grill in Northern Liberties

The Michelin-starred chef's latest culinary concept brings a wood-fired approach to the traditions of the American grill.

In a world filled with vibe dining, some spots focus on the theatrics. Others, like Terra Grill, keep their focus on the menu.

Michelin-starred chef Laurent Tourondel brought his latest culinary concept to the city earlier this year, with its home now in Philadelphia’s Northern Liberties neighborhood. The concept aims to bring a wood-fired approach to the traditions of the American grill with dishes and drinks focused on quality ingredients and Tourondel’s take on classic comfort fare.

At the heart of the menu is its wood-fired grill, which underpins offerings centered on premium meats, pristine seafood, and seasonal vegetables. In short, the dishes are nostalgic and simple in concept, but a lot of thought and time goes into each ingredient and every execution.

Take the Wagyu Hot Dog, for example. The dish is a classic BBQ staple and a ballpark favorite, but with the use of prime Wagyu meat and Grand Cru Gruyere cheese (with a dollop of spicy mustard and sauerkraut), what diners get instead is an upscale dish that actually elevates the experience instead of trying to reinvent it.

Other creative standouts on the small bites portion include Short Rib Steamed Buns with pickled jalapeño-cilantro chimichurri, a Lemon Chicken Parm Sando with tonkatsu sauce, a Stuffed Crab Cake with pickled jalapeño tartare and Black Pepper Crispy Calamari with rice-vinegar sweet chilli sauce.

The menu also reflects the breadth of Tourondel’s nearly four decades in the culinary industry. Known for restaurants like Cello, BLT Fish, and L’Amico, the chef brings the same precision, experience, and attention to detail to this new Northern Liberties destination—especially with its main dishes.

You can start with the Grilled Branzino Puttanesca, served with blistered cherry tomatoes, black olives, capers, and olive oil mashed potatoes, or try the Grilled Red Shrimp with lemon orzo, heirloom tomatoes, and basil garlic butter if you’re into seafood. The Wood-Fired Rotisserie Half Chicken, on the other hand, comes with pickled cherry peppers, tarragon, and mashed potatoes, and the Grilled Five Spice Long Island Duck Breast comes coupled with pickled cherry, grilled radicchio and a sunchoke purée.

For those looking to order from the steak section, the Prime Skirt Steak is an absolute standout with a choice of side and sauce, so you can make it your own. Sides range from crispy French fries to puff dauphine potatoes, grilled asparagus, sautéed spinach, roasted Jersey corn and more. Upgraded steak enhancements are also fun here, with your choice of jalapeño chimichurri, peppercorn, tomato béarnaise, or classic steak sauce for the finishing touch.

Terra Grill also features a decadent burger made with prime beef, 7 peppercorn sauce, caramelized onions, mushrooms and raclette cheese, and a fun trio of desserts (think a Caramel Popcorn Sundae, Tiramisu and Chocolate Ganache Guanaja).

The cocktail menu also brings plenty of personality to the bar, with creative combinations designed to complement the wood-fired fare. The Quick & Dirty puts a savory spin on a martini with tzatziki-washed vodka, house-infused brine, and cucumber, while the Crazy Bird blends dark rum, Campari, pineapple, and fresh lime for a tropical-meets-bitter profile.

For something fruit-forward, the Pasión en Fuego utilizes blanco tequila, passion fruit, dry curaçao, agave, and lime, and the Smokin’ Gun brings together mezcal, blackberry brandy, Bonal, Thai basil, and lime. There’s also the Tiramisu, a playful after-dinner-style cocktail made with vodka, La Colombe espresso, amaretto, mascarpone espuma, and cocoa. And for those skipping the alcohol, the zero-proof menu includes refreshing options like the Cucumber Cooler, Ginger Fizz, and Watermelon Smash.

The beverage list extends well beyond the signature cocktails, with a selection of local and international beers available on draft and in bottles, from Philadelphia Pale Ale and New Jersey IPA to German pilsner and Belgian Trappist ale. The wine list offers something for nearly every palate as well (even a tasty Orange pour from New Zealand).

Designed by Olya Volkova of OV & Co., the restaurant’s interior design is also meant to be approachable, with refined materials, a warm atmosphere and a private courtyard for al fresco dining. Terra also plans on more outdoor grilling events and seasonal activities throughout the sunny season, and also recently started weekend brunch service with dishes like warm Monkey Bread, Scrambled Eggs Cacio E Pepe and The “Boursin” Omelette.  There's also a Happy Hour option here on weekdays. 

Ultimately, Terra Grill’s appeal comes down to a pretty simple idea: take food people already love, cook it over a live fire, use really good ingredients, and let the details do the work. In a dining scene that can sometimes prioritize spectacle over substance, Terra Grill feels equipped to let the food (and the fire) speak for itself.
